These hand-trimmed, beautiful boneless Short Ribs are hard to come by and just so delicious. Like their bone-in counterparts, they are best low and slow. BUT... if you have a sous vide, try 48 hours at 135F, then rub with an herb crust or baste with a glaze and sear on the grill. Hold onto your hats-- these are a blow-you-away situation no matter how you prepare them.
