The Top Sirloin Roast is one of our Swiss-Armiest of cuts! We split the Top Sirloin along its central seam to create two perfect portions. Talk about versatile: want to wrap something in bacon and roast it, but not sure you're up for a whole tenderloin? This is the roast for you! Cut into thin strips and you're set for beef curry, stir fries, and stroganoff. Want to DIY sirloin steaks? Go for it! And though we always have to warn about the risks of consuming raw or undercooked meats, at home we mince for tartare or slice into thin rounds and pound to make carpaccio... If you're interested in keeping your options open, keep a few of these in your freezer!
