Short Ribs reinvented for summer grilling! Flanken or Korean-Style short ribs (also known as Kalbi) are sliced across the bone into thin slabs that resemble thick-cut bacon. Our favorite preparation is to marinate overnight in a mixture of 2 kinds of vinegar, soy sauce, dark brown sugar, and garlic, then slap on a super hot grill for 3-4 minutes each side. Gnaw on them while they're hot. They've got a satisfying chew and outstanding flavor.
