A delightful add-on for anyone who believes roasted bone marrow is the carnivore equivalent to the nectar of the gods. Basically, this is roasty, toasty, delightful meat butter. And offering it to you all helps us maintain our nose-to-tail, whole-animal philosophy. If you're not into roasting, add to your soups and stews for added depth of flavor.
Season with salt (add pepper and/or herbs if desired) and roast at 400 degrees for 18 minutes. Top with chopped parsley or a quick mist of lemon juice if you like a little brightness. Then spread over crusty bread as an appetizer or side.
