Beef with Lamb Fat in lamb casings
We have partnered with MeatCrafters, a local artisanal charcuterie company, to produce the world’s best beef and lamb sausage. Our version of this French-North African classic combines fresh garlic, fresh shallots, and fresh cilantro with the best aromatic Hungarian paprika, smoked Spanish paprika, French gray sea salt, black pepper, coriander, cumin and oregano. Its spice will snap you to attention without being overwhelmingly hot.
Pro-tip: for an alternative to sausages on the grill, try removing the casings (just slice and peel). Brown in a sauté pan or saucepan over medium heat for 5-10 minutes, breaking the sausage into smaller bits with a wooden spoon. Add to eggs in the morning, make an outrageously delicious pasta sauce, stuff in a bell pepper, etc. The options are limitless!
