The Coulotte Steak, most popular in places like Portugal and Brazil, goes by many names: including sirloin cap, rump cap, rump cover, and Picanha Steak. In our opinion, a rose by any other name is still a Coulotte (or culotte), and it is a revelation! The photo shows one Coulotte fat-cap-up and one fat-cap-down.
To prepare: bring your steaks up to a low internal temperature in a 200 degree oven, then slice each into 2-3 pieces and sear on all sides in a hot pan on the stovetop. Life doesn’t get any better than this!
