Our Striploin End Roasts are from the tapered end of the Striploin, the same muscle that gives us our 8oz NY Strip Steaks. Striploin Ends make a beautiful petite roast, but you can also slice your own slender steaks (go for 5-6oz portions), or cut into thin slices for Mongolian beef, beef curry, lemongrass beef, etc. This is a beautiful cut of meat, lean and bright with a tight musculature and rich, lush flavor.
