Low and slow is the game here. Our briskets are a bit leaner than conventional briskets, but the flavor will blow you away. Whether in the smoker or in the oven, try a lower temp for a bit longer. For oven baking, we advocate for seasoning well (brining overnight if you can), then placing on a slotted baking pan over a rimmed baking dish. Pour 3 cups of liquid inside the lower baking dish and cover the whole thing (brisket and pans) tightly with foil.
