We have partnered with MeatCrafters, a local artisanal charcuterie company, to produce this delicious all beef Spicy Rosemary sausage. Made with fresh rosemary and thyme from mom's herb garden at Chapel Hill Farm (for real!), it's got a nice little kick of cayenne. This sausage is all beef, with no added fat, so it's a bit leaner than our other sausages. Try steaming for 3 minutes, then searing, to maintain moisture, rather than hitting them with high heat for the usual 8 minutes.
Pro-tip: for an alternative to sausages on the grill, try removing the casings (just slice and peel). Brown in a sauté pan or saucepan over medium heat for 5-10 minutes, breaking the sausage into smaller bits with a wooden spoon. Add to eggs in the morning, make an outrageously delicious pasta sauce, stuff in a bell pepper, etc. The options are limitless!
