Randall Linebacks date back to the 1600s and are one of only two remaining American Landrace cattle breeds. They were never altered to fit the demands of industrial agriculture, which demands big, fast growing, fat, highly corn-tolerant animals. Randalls are smaller, slower to grow, and live their lives outside eating grass. Their genetics are designed for outdoor living, from the coldest winters to the hottest summers. They are a true time capsule, with unchanged genetics dating back 400 years.
Randall Lineback beef is worlds away from fatty conventional beef. Conventional beef has been altered to tolerate huge amounts of corn and soy. Because cattle are ruminants, built to primarily eat grass, this leads to unhealthy loads of fat threading through their muscle fibers. The industry labels this "marbling" and has convinced consumers it indicates the highest quality beef when, in fact, this is the sign of excess fat and poor diets. Randalls never learned how to marble. They store their fat around the outside of their muscles and boast extremely flavorful, lean, luscious meat, built from healthy grazing and outdoor living.
All of our processed Randall Lineback products are crafted in partnership with small, local businesses. They focus on small batches, quality ingredients, and traditional processes. We do not use synthetic additives or any ingredients you can't pronounce. And we are honest about what is in them (for instance, our tallow is 100% suet, not the beef fat trimmings often marketed as tallow). Our products are made by the hands of real people in small quantities, the traditional way. You can taste the difference (and feel it, too).
This product, and all products marked gluten free on our storefront do NOT contain gluten. We do not use gluten as an additive or a filler, so you can consume Randall Lineback products marked "gluten free" with confidence.
Randall Linebacks are not a large cattle breed, and they do not grow very quickly, especially when compared to conventional breeds. Given their heritage genetics, they were never altered to fit the fast/ fatty requirements of industrial beef production. We never use growth hormones or steroids to grow bigger, fatter cows. We like them just the way they are. They are America's original slow food-- the natural way is the best way. It makes for happier, healthier cows, and better beef.
