Marrow bones are one of the world's great delights. And they've got great health benefits, too-- packed with collagen, glycine, and glucosamine. Grass fed marrow bones are also higher in omega-3 fatty acids and conjugated linoleic acid (when compared to grain fed animals).
To prepare, add a little salt (herbs, too, if you want to get fancy), and roast them upright in a rimmed baking dish. Then scoop out the marrow and spread it on toast: the definition of indulgence. Or you can add to stews and soups for added richness. Really anything you do will be delicious. And don't forget, kept raw, they are also great dog chews (always supervise a dog when chewing on a bone!).
