If you are looking for lean, tender, gorgeous meat, heart is the way to go. But trimming a heart to get it cubed and ready to cook can be an intense & time-consuming undertaking. So: we had our local butcher do it for you! Your heart arrives in a 1-lb package, cut into delectable 1" cubes. This is rich, buttery flavor in a lean, no-fat package. Before you prepare, to ensure a tender bite, do a quick check-over and trim off any extra bits of white edging the butcher may have missed.
Our favorite preparation is as Peruvian anticuchos. Marinated, skewered, and quick-cooked on the grill, they are stunningly good. This recipe requires Aji Panca for the marinade (our favorite is Inca's Food Aji Panca).
